If you are looking to fill your lunch box with a quick and tasty recipe- here is ivy gourd fry. This dish can be prepared in no time and is healthy compared to other deep fried items.
Wash the ivy gourds, trim the ends and cut each one lengthwise into two halves. Transfer them to a mixing bowl.
Add the Kashmiri chilli powder, chilli flakes, turmeric powder, asafoetida, crushed garlic, chopped curry leaves and salt. Mix well until the ivy gourds are evenly coated with the spice mixture. Cover the bowl and refrigerate (or place it in the freezer) for about five minutes.
Heat the oil in a frying pan over medium heat. Arrange the ivy gourds in a single layer and fry them on both sides until they turn golden brown and crisp.
Serve hot as a side dish with rice and curry, or enjoy it as a snack.
